Popayán

Conocida como la bella CIUDAD BLANCA, está ubicada en el suroeste del país, entre la sierra montañosa del oeste y la cordillera central de Colombia al este. Esta ubicación le permite gozar de vistas espectaculares y de una biodiversidad asombrosa en los alrededores. Se encuentra a 1.760 metros sobre el nivel del mar y su temperatura promedio es de 18 a 20°C. Su nombre, según la tradición oral de la ciudad, proviene del Cacique Payán, jefe de una tribu indígena, pero según el historiador Arcesio Aragón, el origen de la palabra es “Pampayán”, que se compone de dos vocablos quechuas: PAMPA, cuyo significado es, valle, sitio o paso; y YAN, cuyo significado es río. Paso del río, ya que por allí pasa el río Cauca.

Popayán era un lugar importante durante el período colonial de Colombia. Está estratégicamente ubicada entre Lima, Quito y Cartagena, por esta razón, fue un punto de intercambio de oro y riquezas minerales que fueron llevadas desde Colombia hasta España. Gracias a esto, Popayán es una de las ciudades con mayor importancia y riqueza arquitectónica. Además cuenta con gran riqueza gastronómica, de variedad y significado para el patrimonio intangible de los colombianos. Es el único lugar de Latinoamérica en haber sido declarada Ciudad de la Gastronomía por la Unesco en 2005, por lo cual se realiza anualmente en el mes de agosto el Festival Gastronómico Internacional.
